For the snow wheels, beat the egg whites until very stiff. Slowly add the sugar while continuing to whisk.
Finally, fold in vanilla sugar, ground anise and a few drops of lemon juice into the snow.
Fill the snow into a piping bag with a round nozzle. On a baking tray lined with parchment paper with the flaked almonds, make circles about 7 cm in diameter and pipe tight spirals on them .
Sprinkle coarse sugar in the center of the snow wheels and dry in a preheated oven at about 100 °C for at least 100 minutes.
