Peel apples and cucumber, cut in half lengthwise, remove seeds and cut into small cubes. Rinse, dab and chop the chives.

Stir everything in with the mayonnaise, add vinegar and season with pepper and salt. Fillet the salmon trout and bring it to the table with the apple sauce and the chives.

Our tip: Always use fresh chives if possible!
