For the quick chocolate apricot cake, first melt the chocolate slowly in the oil and allow to cool.
In the meantime, sift together the flour, baking powder, powdered sugar and vanilla sugar. Wash, halve and pit the apricots.
Now mix the chocolate-oil mixture well with the sour cream and then briefly stir in the eggs.
Then mix with the dry ingredients, but only enough so that no flour is visible.
Now spread the mixture onto a baking tray lined with baking paper and top with the apricots. Bake the chocolate apricot cake in a preheated oven at 180 °C for approx. 30-35 minutes.
