For the polenta with ham and peas cream, first bring the water to a boil, stir in the polenta and simmer on low heat for about 15 minutes. Stir again and again. Then fold in the butter, whipped cream and egg, season with salt and pepper and remove from the plate.
Cut ham into small cubes and mix with peas and sour cream. Season to taste with salt and pepper.
Heat some oil in a pan. Add the polenta in portions (possibly using cake rings to keep it in shape or later simply cut into nice rectangles) and fry on both sides.
Arrange polenta with ham and pea cream and serve.
