Instructions:

Rösti: Mix nuts with salt and pepper and mix with potato strips. Coat lightly preheated, coated frying pan with oil. Bake Rösti one after the other according to the number of portions. Keep warm in the oven at 100 °C until serving.

Grape cabbage: Heat large saucepan slightly, add cabbage and caraway seeds and sauté without fat for 1/2 minute, stirring continuously. Only then add butter and stir briefly. Add wine and evaporate. Add clear soup and whipped cream. Reduce liquid almost completely in 10 min over low heat, stirring occasionally. Season to taste with salt, pepper and a pinch of nutmeg. Fold in grapes and bring to table on the spot.

Grape marc sauce: boil clear soup and whipping cream to half. Mix in flour butter with whisk. Add marc. Bring to the boil again and season if necessary.

Preparation Knead together flour and butter in equal parts by volume at room temperature.
