For the ham pasta, first cook the pasta in boiling hot salted water for 8 minutes until al dente. Drain, rinse briefly under cold water and let drain.

Peel and chop the onions. Cut the ham into thin strips.

Melt the butter in a non-stick frying pan and sauté the onions until translucent. Stir in the ham and pasta and sauté briefly.

Mix the eggs with 1 pinch of salt, pepper and some freshly grated nutmeg and pour over the ham noodles. Over medium heat, let the egg set, stirring occasionally.

Wash and dry the chives and cut into fine rolls.

Arrange the ham noodles on warm plates and sprinkle with the chives.
