For the Grammel dumplings with sauerkraut, first prepare the potato dough according to the basic recipe.

Peel and finely chop the onion and garlic. Also chop the grams finely. Season with salt and pepper.

Form the potato dough into a roll and cut off pieces of equal size. Flatten, put some of the gram mixture in the middle and form into a dumpling.

Bring water to a boil and cook the dumplings in it in batches until they float to the top.

In the meantime, heat the sauerkraut and season with salt, pepper and caraway seeds. Add a little water if necessary.
