For the game stew pot, peel the soup vegetables and shallots and cut into small cubes with the leek.

Heat the oil in a wide pot and sear the meat in it. Add the vegetables and tomato paste and fry briefly.

Deglaze with red wine and reduce slightly. Now pour the game stock and add juniper berries, allspice, thyme and grated orange peel.

Simmer on low heat for 1-1 ½ hours, then add the couverture and cranberries.

Season well with salt and pepper and serve the game stew pot in deep plates.
