For the tomato sauce, peel and finely chop an onion and garlic. Heat a little olive oil and briefly sweat the onion and garlic. Deglaze with the canned tomatoes. Season with salt, pepper and the fresh herbs. Let it boil down for a few minutes.
For the French Tart with St. Albray, cut the bell bell pepper into fine rings. Peel the second onion and cut into fine rings.
Roll out the pizza dough, place it on a baking tray lined with baking paper and spread with the tomato sauce. Top with the yellow peppers and the onion rings.
Finely slice the Saint Albray and spread evenly over the tart, finishing with the red bell pepper rings and olives. Sprinkle the French Tart with Saint Albray with thyme and bake in the oven for about 25 minutes until crispy .
