Instructions:

For the elderberry puree, slowly heat the de-stemmed, washed elderberries over a low heat in a pan with a little water until they burst.

Then strain through a sieve and stir in sugar while stirring until the puree falls from the spoon in coarse flakes.

Towards the end of the cooking time, season the elderberry puree with a little cloves or possibly nutmeg.
