For the coconut cookies, knead a shortcrust dough from flour, 10 dag of confectioner’s sugar, butter and egg yolk. Let the dough rest.
Then roll out the dough and cut out cookies. Beat the egg whites until stiff and mix with the remaining sugar and the coconut flakes.
Place small heaps on the cookies, bake at 180 degrees for about 10 minutes and sprinkle the coconut cookies with powdered sugar.
