For the chocolate doughnuts, mix flour, powdered sugar, hazelnuts, chocolate and powdered sugar. Cut in butter. Add the yolks. Knead all ingredients well and roll out thinly.
Cut out cookies with a round cookie cutter. Bake in the oven at 160-170°C for about 15 minutes. Let the chocolate doughnuts cool down.
Fill with apricot jam and dip half of the cookies in chocolate glaze.
