For the chicken skewers with arugula pesto and tomatoes, first rinse the arugula in cold water, shake dry and chop coarsely. Finely grind with pine nuts, olive oil and parmesan and season well with salt and pepper.

Cut the chicken breasts into smaller cubes. Thread chicken cubes and tomatoes alternately onto skewers. Marinate the chicken skewers with the pesto and then sear on the grill or in a pan for 2 minutes on all sides. Serve chicken skewers with arugula pesto and tomatoes immediately.
