Rinse meat, dry and tie with kitchen twine.
Season. Heat oil in a roasting pan. Brown turkey leg on all sides. Extinguish with tap water. Cook in oven at 225 degrees Celsius for about 1 and a quarter hours. After 45 minutes, add peeled shallots and cleaned, chopped greens. At the end of cooking time, remove meat and greens, keep warm briefly. Deglaze stewing stock with wine.
Bring to the boil briefly. Stir flour and whipping cream until smooth, thicken sauce. Season to taste. Cut out the kitchen string from the meat, offer everything together.
