A great cake recipe for any occasion:
Carrot Honey Cake is suitable for kids 10 months and older who are now starting to nibble. The cake is not exceptionally sweet and equally good as a snack on the go.
Preheat the oven to 180 °C (gas mark 2). Grease a loaf pan 29 x 10, 5 cm, 1, 5 liters capacity) and sprinkle with wholemeal breadcrumbs. Separate eggs, whisk egg yolks with honey until creamy. Gradually add the room-warm light butter or butter. Gradually add the gingerbread spice (a mixture of cloves, new spice, cinnamon, mace and cardamom), salt, almond kernels, juice of one lemon and carrots. Mix the flour with the baking powder and stir into the dough. Beat the egg whites until stiff and mix gently. Pour the batter into the prepared pan and bake in the heated oven for 50-60 min. Cool the cake, store in a tin well sealed in the refrigerator. Stays fresh for up to 2 weeks.
Variations: You can also enrich the cake with raisins or other dried fruits. Small cakes are very popular with children: You can also fill the dough into small paper sleeves. However, the baking time is then reduced to 15-20 min.
