Instructions:

For the apricot crème fraîche tartlets: Slightly warm 50 ml whipped cream and dissolve gelatin in it, add crème fraîche. Whip the remaining whipped cream with vanilla sugar and sugar and fold in. Fill the mixture into dessert rings and chill for 2-3 hours.

For the apricot hood: Strain apricots and bring to the boil briefly with sparkling wine, gelatine and sugar. Allow to cool and spread on the cooled desserts. Chill again.

For the strawberry sauce: puree strawberries and season with sugar and lemon juice.

Arrange decoratively on a plate: Spoon strawberry sauce onto dessert plates and place an apricot crème fraîche tartlet in the center. Enjoy!
