For the zucchini cordon bleu, cut the zucchini widthwise into slices about 1/2 cm thick. Season with salt and garlic.
Cut the ham and cheese to the size of the zucchini slices. Now top each zucchini slice with a sheet of ham and cheese and cover with a zucchini slice.
Press down well and poke through and through with 2 toothpicks each. Prepare flour, beaten eggs and bread crumbs for breading in one plate each.
Dredge zucchini cordon bleu in flour, pull through egg and roll in bread crumbs. Then bake in the fritter until golden and dab with kitchen roll.
