For the veal chops in paper sleeve, finely chop the onion and parsley. Slice mushrooms and mix with lemon juice. Lightly pound chops and season with salt and pepper.
Cut the bacon strips in half. Sauté in butter and add onion, parsley and mushrooms. Saute until water has evaporated, then let cool. Cut four large hearts from buttered paper, place a slice of bacon cut in half on each half, place a cutlet on top, spread mushroom mixture on top and place another slice of bacon cut in half on top.
Place second half of buttered paper over filling and roll up slightly at ends and press tightly. Place the chops on a rack and let them roast in a preheated oven with 200 degrees convection for 10-12 minutes. Arrange in preheated plates in the paper wrapper and open the veal chops in paper wrapper only at the table.
