Sweet Potato and Wild Garlic Strudel

Instructions:

First, peel the sweet potatoes, cut into 1 cm pieces and boil in salted water for 10 minutes until soft. Then strain and let cool.

Briefly blanch the wild garlic, rinse with cold water and cut into thin strips.

Lightly mash the cooled sweet potato cubes with a fork and mix with the wild garlic.

Spread the mixture on the rolled out puff pastry, sprinkle the finely chopped feta cheese on top and finally season with cayenne pepper. Brush the edges with a little milk and roll up the strudel. Finally, brush the strudel with milk and sprinkle with sesame seeds.

Bake at 190 °C for about 30 minutes.

For the sauce, chop the chives and mix the sour cream, mayonnaise, mustard and salt.

Arrange the strudel with the sauce and serve.
