For the Ringlotten streusel cake, first prepare the streusel: Cut the butter into small pieces and mix well with the flour and sugar. Grate into coarse crumbs, place on a plate and refrigerate for about half an hour.

In the meantime, preheat the oven to 180 °C. Wash, halve and remove the seeds from the ringroot. Sift flour with baking powder. Separate the eggs.

Cream the butter with the powdered sugar, vanilla sugar, grated lemon zest and a little salt, gradually stirring in the yolks.

Beat the egg whites with the granulated sugar until stiff. Stir the snow and then the flour into the yolk mixture. Spread the dough on a baking tray lined with baking paper and cover with the ring-shaped dumplings.

Finally, sprinkle the crumble on top and bake for about 45 – 50 minutes.
