Heat butter and lightly caramelize granulated sugar in it. Peel the shallots or onions, stir in, season with salt and pepper and pour in red wine. Cook the onions until al dente, remove, reduce the liquid to a syrupy consistency and add the onions back in. Toss and serve as a side dish.
