For the Orange Lentil Salad with Mango, bring salted water to a boil in a saucepan. Cook the red lentils according to the package instructions, drain in a sieve, rinse in cold water and drain.
In the meantime, clean the snow peas and cook in boiling salted water for 1 to 2 minutes until al dente. Peel the mangoes and cut the flesh into cubes.
For the vinaigrette, mix well the marmalade with orange juice, vinegar, oil, a pinch of salt and pepper. Mix the lentils, snow peas and mango cubes with the vinaigrette.
Clean the young onions, cut them into rolls and roughly chop the almonds. Mix the green onions into the lentil salad and season with salt and pepper to taste.
Arrange the lentil salad with mango on plates and sprinkle with almonds and garnish with cress.
