For the fried potatoes, heat oil in a pan. Sauté the onion slices, move to the edge of the pan and fry the tofu pieces.

Move to the edge and stir fry the potato pieces as well. Stir soy sauce into soup, add salt and pink pepper.

Chop the arugula very finely and mix it in, pour everything into the potato pan and let it boil down a bit, then serve.
