For the Mediterranean trout, peel and finely chop the garlic. Wash trout well and dry. Sprinkle inside and outside with lemon juice, salt and pepper.
Stuff the trout with the chopped garlic. Place the fish in an ovenproof dish.
Spread the finely chopped vegetables all around. Sprinkle everything with rosemary and drizzle with olive oil. Add a little water.
Cook in the preheated oven at 160°C for about 30-45 minutes.
Wash the three potatoes well and cut them with the skin into slices about 0.5 cm thick. Place them on a baking tray lined with baking paper, drizzle with olive oil and season with salt.
Cook the Mediterranean trout in the oven at 200°C (convection oven) for about 20 minutes until crispy and brown.
