Peel garlic cloves, place in a saucepan of cold water, bring to a boil and simmer for 2 to 3 min. Drain garlic cloves. Repeat process five times, adding salted water the last time. In the meantime, boil the lightly salted, unbeaten whipping cream with the savory, remove from the fire on the spot and steep with the lid closed. Pluck the parsley and cress, rinse, pat dry and weigh very finely. Remove savory from the whipping cream and heat them repeatedly.
