For the doughnuts, mix well flour with sugar, baking powder, vanilla sugar and cinnamon, crumble with butter and knead in the eggs, let rest for 30 minutes. Roll out and cut out round doughnuts.

Place on a baking tray lined with baking paper and bake until light. When cool, fill with jam and roll in powdered sugar mixed with vanilla.
