Preparation - Marinate the perch fillets with the juice of a lemon and pepper - Prepare the mushrooms (e.g. peel, remove woody parts and dirt) and cut into slices - Chop the shallots and garlic - Chop the chives.
Preparation - Season perch fillets with salt, flour, lightly pat - Fry in oil on both sides until golden brown - Arrange on preheated dishes and keep warm - Sauté mushrooms with shallots and garlic in butter and season - Spread evenly over the fish fillets - Sprinkle with chives
